Tasty Tuesday - Homemade Chicken Tenders

A few members of the MOMS Club of SW Madison & Verona gathered together this month to make one freezer meal main dish. Freezer-friendly meals can take the stress away from coming up with yet another dinner plan and help on those nights when you just don’t have time to do anything except turn on the oven.


Tools:
3 shallow dishes
Tongs
Parchment Paper
Metal Pan

Ingredients:
Chicken Breast Strips (you can cut your own from chicken breasts or purchase them)
Flour (season with Italian Seasoning, salt, and pepper)
Eggs (1 or more depending on the quantity you are making. Probably one for each pound of chicken.)
Bread crumbs (we used seasoned Italian Style Bread Crumbs. )

Instructions
Place seasoned flour in one dish, beaten eggs in a second dish, and bread crumbs in a third dish.  Using tongs, dip chicken (a piece at a time) first in flour, then in egg, and then in bread crumbs. Place breaded chicken in a single layer on metal pan lined with parchment. Freeze for 2-3 hours until solid and then put in a freezer-safe storage container.

Baking Instructions
Preheat oven to 350 degrees Fahrenheit. Bake desired number of chicken tenders for 25-30 minutes until internal temperature reaches at least 165 degrees Fahrenheit.

Note: We found it much easier to just use our fingers when breading the chicken. If you don’t like getting your hands dirty, then by all means use the tongs, but we found that using the tongs made it a much slower process. When handling raw chicken and eggs, please make sure you wash your hands and all utensils/bowls/etc/ thoroughly. Raw chicken and eggs can contain salmonella bacteria.
